Buckwheat Mushroom Pie ( Kyxarka)

Dough:
2 cups of flour
1 cup of warm water
1 tea spoon of yeast
1/4 tea spoon of salt
1 table spoon of sugar
3 table spoons of oil

Filling: 1 cup of buckwheat, handful of dry mushrooms ( soaked for at list 30 minutes), 1 large onion, salt pepper to taste.

1/4 cup of warm water + yeast + sugar and 2 table spoons of flour. Sift flour into the bowl, add yeast mix. You will end up with very sticky dough. Knead about 10 minutes using stretching method. Add 3 table spoons of oil as kneading. Let rise til doubles or triples in size. Please dough on the board and press out by hand to create large circle. Place filling in the middle. Close forming a giant "hand pie". Press it out to flatten using the same method that is used for naan or paratha. Turn over to the baking sheet. Bake till golden at 350 F ( 175C)
