Lemon Prune Cake (Martha Stewart)
1/2 cup of olive oil
1/2 cup of milk
1 egg or 1 table spoon of ground flax seed and 3 table spoons of water
1 1/2 cups of flour- all -purpose or whole wheat cake flour
3/4 cup of sugar
1/2 tea spoon of baking powder
1/4 teaspoon of salt
6 chopped prunes
1 teaspoon of lemon flavor
Preheat oven to 350F ( 175 C)
Wisk flour, sugar, salt, baking powder. Combine oil, milk, egg, lemon flavor and prune in another bowl. Add liquid ingredients to flour mix. Mix to incorporate.
Put dough in the 10" round tart pan and flatten by hand moistened with oil. Bake till golden on top.
